Looking for Ideas

I am currently putting together 2 courses for teachers in our district. One of the courses is called Differentiating Instruction with Technology. The purpose of this course is to help teachers focus on the needs of our ELL, Special Ed and Title 1 students, and to use the resources currently available to them to develop learning activities and resources that support these kids. Essentially we will look at what these kids need; clear expectations and objectives, opportunities for repetition, and a review of prerequisite skills and knowledge. The resources available to these teachers are text books, publisher prepared CDs and web resources, NetTrekker di, Atomic Learning, Moodle, Unitedstreaming, MS Office, and various web 2.0 tools (podcasting, blogs, wikis) and open source applications such as gliffy. Participants will be K-12 from all subject areas. What I am looking for are some good examples of teacher created work in various subject and levels. I can come up with general suggestions for example; create a screencast of key terms and concepts for students to review that is posted on moodle for kids to access on their own. But I would like to have a large collection of examples to help inspire participants to create materials on their own. I will be adding a page to the resource wiki for this course. I am also creating a rubric to evaluate these learning activities/resources, I would welcome any suggestions on how to improve this Draft- Learning Resource Evaluation Rubric. So please pass on any good examples of teacher created learning resources and comments for the rubric. Thanks!
